Western Sandwiches Recipe
Ingredients
| Cooked ham | 1/4 Cup (16 tbs), minced | |
| Yellow onion | 1/4 Cup (16 tbs), minced | |
| 1/4 cup minced sweet green pepper | ||
| Butter/Margarine | 1 Tablespoon | |
| 2 eggs, lightly beaten | ||
| Cold water | 2 Tablespoon | |
| Salt | 1/8 Teaspoon | |
| Pepper | 1 Pinch | |
| 4 slices hot buttered toast, buttered bread, or 2 hard rolls, split in half | ||
Directions
Stir-fry ham, onion, and green pepper in butter in a heavy 9" skillet over moderate heat 2-3 minutes until onion is limp.
Mix eggs, water, salt, and pepper, pour into skillet and fry like a pancake until firm and lightly browned underneath; turn and brown flip side.
Halve and sandwich between toast, folding as needed to fit.
