Ingredients

 Cooked ham1/4 Cup (16 tbs), minced
 Yellow onion1/4 Cup (16 tbs), minced
 1/4 cup minced sweet green pepper
 Butter/Margarine1 Tablespoon
 2 eggs, lightly beaten
 Cold water2 Tablespoon
 Salt1/8 Teaspoon
 Pepper1 Pinch
 4 slices hot buttered toast, buttered bread, or 2 hard rolls, split in half

Directions

Stir-fry ham, onion, and green pepper in butter in a heavy 9" skillet over moderate heat 2-3 minutes until onion is limp.
Mix eggs, water, salt, and pepper, pour into skillet and fry like a pancake until firm and lightly browned underneath; turn and brown flip side.
Halve and sandwich between toast, folding as needed to fit.
