Western Sandwiches Recipe
This western sandwich recipe is a bacon and egg sandwich recipe. Prepared with onions and green pepper, the western sandwich recipe is great for lunches or supper.
Ingredients
| 4 slices bacon, cut in small pieces | ||
| Eggs | 8 | |
| Salt | 1/2 Teaspoon | |
| Pepper | 1 Dash | |
| Green pepper | 1/2 Cup (16 tbs), chopped | |
| Onion | 1/4 Cup (16 tbs), chopped | |
| 16 slices enriched or whole wheat bread | ||
| Soft butter | ||
| Mayonnaise | ||
Directions
Fry bacon.
Spoon off about half the fat.
Beat eggs slightly; add salt and pepper.
Pour egg mixture into skillet.
Keep fire low.
When mixture starts to set at bottom and sides, lift cooked portions with a wide spatula so uncooked mixture goes to bottom of skillet.
When eggs are almost firm, remove from heat and add green pepper and onion.
Trim crusts from bread; toast slices on one side.
Spread untoasted side of 8 slices with butter, and 8 with mayonnaise.
Top buttered slices with hot scrambled eggs; cover with slices spread with mayonnaise.
