Western Meal-In-One Recipe

Ingredients
| Ground beef | 1 pound | |
| 1 tablespoon salad oil or bacon drippings | ||
| Garlic | 1 Clove (5gm), mashed | |
| Salt | 1 Teaspoon | |
| Onion | 1 Large, finely chopped | |
| 1 green pepper, seeded and chopped | ||
| Chile powder | 1 Teaspoon | |
| Tomatoes | 1 Can (10oz) | |
| Kidney beans | 1 Can (10oz) | |
| Rice | 3/4 Cup (16 tbs), uncooked | |
| Ripe olives | 1/4 Cup (16 tbs), chopped | |
| Shredded Cheddar cheese | 3/4 Cup (16 tbs) | |
Directions
Brown the ground meat in oil until crumbly.
Add garlic, salt, onion, green pepper, and chile powder, and saute for 5 minutes, or until vegetables are limp.
Mix in tomatoes, kidney beans, and rice, and turn into a greased 2-quart casserole.
Bake, uncovered, in a 350° oven for 45 minutes.
Sprinkle with olives and cheese, and continue baking for 15 minutes longer, or until cheese is melted. (If you assemble the casserole in the morning and refrigerate it, allow 1 1/2 hours for baking.)
