Ingredients

 
11/2 Cups All-Purpose Flour
 
1 Tbsp. Baking Powder
 
1/2 Tsp. Salt
 
1 Tsp. Ground Ginger
 
1/4 Cup Brown Sugar
 
2 Eggs
 
1/2 Cup Yams, Cooked and Mashed
 
2/3 Cup Milk
 
3 Tbsp. Butter or Margarine, Melted
 
1 2 Tbsp. Molasses (To Taste)

Directions

Blend together flour, baking powder, salt, ginger and brown sugar in a large bowl.
Whisk eggs, yam, milk, butter and molasses.
Make a well in the dry ingredients and add the liquid mixture, stirring lightly and quickly.
Spoon into greased muffin cups and bake until tester comes out clean.
Bake at 400 degrees 20 to 25 minutes

Wow! This is a life saver for my georgraphy project because I needed a recipe for my class that I have in the morning. Plus I'm trying to do guinea in west africa and all the dishes from there are super spicy and theres no way I'm serving spicy food in the morning! This is So perfect muffins in morning, but with a west african twist! :)

I think it has to be 1/2 tbsp, as in brackets it is given "to taste".
