Chester Welsh Rarebit Recipe
Ingredients
| 6-8 oz. Chester cheese in a block | ||
| 5 tbs. light beer | ||
| Flour | 1 Tablespoon | |
| Butter | 3 Tablespoon | |
| Mustard powder | 1 Teaspoon | |
| Dash of Tabasco sauce | ||
| Pinch of freshly ground white pepper | ||
| Several dashes Worcestershire sauce | ||
| White bread slice | 4 | |
Directions
Preheat the oven to 375°.
Coarsely grate or dice the cheese.
Warm the beer and add the cheese to melt, stirring constantly.
Knead the flour with the butter.
Stir into the cheese sauce.
Season the sauce with the mustard powder, Tabasco sauce, pepper and Worcestershire sauce and remove from the heat.
Toast the slices of bread lightly, lay them on a baking sheet and spread with the cheese mixture.
Bake the toast in the oven for 15 minutes or until the cheese is golden brown.
Cranberry sauce is a good complement to this dish.
