English Mustard Welsh Rarebit Recipe

The Welsh Rarebit is always in demand at my place! My family loves to have this on weekend morns! Try this wonderful Welsh Rarebit recipe.

Ingredients

 
1 tablespoon butter
 
1 tablespoon flour
 
2 tablespoons milk
 
2 fl. oz. brown ale or dark beer
 
2 teaspoons Worcestershire sauce
 
1 teaspoon prepared English mustard
 
1/2 teaspoon salt
 
1/2 teaspoon freshly ground black pepper
 
8 oz. Cheddar cheese, grated
 
4 slices toast, buttered and kept hot

Directions

Preheat the grill [broiler] to moderately high.
In a medium sized saucepan, melt the butter over moderate heat.
Remove the pan from the heat and, with a wooden spoon, stir in the flour to make a smooth paste.
Gradually add the milk, ale or beer, Worcestershire sauce, mustard, salt and pepper, stirring constantly.
Return the pan to low heat and cook, stirring constantly, for 2 to 3 minutes or until the mixture is thick and smooth.
Add the cheese to the mixture and cook, stirring constantly, for a further 1 minute or until the cheese has melted.
Remove the pan from the heat and divide the mixture among the slices of toast.
Place the toast in the grill [broiler] pan and place the pan under the heat.
Grill [broil] for 3 to 4 minutes or until the mixture is golden brown.
Remove the pan from under the heat.
Transfer the toast slices to individual warmed plates and serve the rarebit immediately.
