Spicy Welsh Rarebit Recipe
Ingredients
| Beer | 1/4 Cup (16 tbs) | |
| Paprika | 1/4 Teaspoon | |
| Dry mustard | 1/4 Teaspoon | |
| Cayenne pepper-pinch | ||
| Butter/Margarine | 1 Teaspoon | |
| Cheddar cheese-1 cup (4-oz)-shredded | ||
| Egg yolk | 1 | |
| Worcestershire sauce | 1 Teaspoon | |
| Salt, pepper | ||
| Bread-2 slices-toasted | ||
Directions
MAKING
1. In a large 1-quart sauce pan, combine the paprika, beer, mustard and cayenne pepper and combine well
2. Heat the pan over medium heat till the mixture begins to bubble
3. Then add the butter, cheese, and mix well again over gentle heat
4. When the mixture is hot through add the egg yolk and cook gently but do not boil.
5. Add Worcestershire sauce to the pan and then season the mixture with salt and pepper
6. Remove from heat and set aside to cool
SERVING
7. Serve the blend on top of the toasted bread
