Welsh Rarebit Recipe

Ingredients
1 cup skim milk
1 tablespoon flour
1 teaspoon Dijon or spicy brown mustard
1/2 teaspoon Worcestershire sauce
3 drops hot red pepper sauce or to taste
1 cup shredded Cheddar cheese
6 slices whole wheat toast, cut in half diagonally
Paprika to taste
Directions
In a small heavy saucepan over moderately low heat, whisk together the milk, flour, mustard, Worcestershire sauce, and red pepper sauce, and heat the mixture until it bubbles gently; let it simmer for 4 minutes, whisking constantly.
Whisk in the cheese, a little at a time, and cook the sauce over moderately low heat (do not let it boil) for 4 minutes or until it is smooth.
Divide the toast among 4 plates and spoon the rarebit over each portion.
Sprinkle with paprika.
