Spiced Welsh Rarebit Recipe
Ingredients
| Butter/Margarine | 1/4 Cup (16 tbs) | |
| Flour | 1/4 Cup (16 tbs) | |
| Dry mustard | 1/2 Teaspoon | |
| Worcestershire sauce | 1/2 Teaspoon | |
| Cayenne pepper | 1/8 Teaspoon | |
| Dash ground nutmeg | ||
| Salt | 1/2 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Milk | 1 Cup (16 tbs) | |
| 1/2 cup beer or cider | ||
| Shredded Cheddar cheese | 2 Cup (16 tbs) | |
| Toast, biscuits, or toasted English muffins | ||
Directions
1. Place butter in a 1 1/2 -quart glass casserole. Microwave at Time Cook
for 1 to 2 minutes, or until melted. Stir in flour and seasonings, blending to make a smooth paste. Add milk, stirring until smooth. Microwave, uncovered, at Time Cook (power level 10) for 3 minutes, or until boiling and thickened, stirring every minute. Mixture will be very thick.
2. Stir beer into milk mixture. Add cheese. Microwave, uncovered, at Time Cook for 4 to 5 minutes, or until cheese has melted, stirring every minute
