4 slices Italian Classics Prosciutto
 
4 leaves fresh sage
 
4 cod fillets (about 6 oz each)
 
Pepper
 
Wegmans Pan Searing Flour
 
2 Tbsp Wegmans Pure Olive Oil
 
1 Tbsp Wegmans Basting Oil
 
1 tsp Wegmans Butter
 
1 pkg (8 oz) Food You Feel Good About Roasted Sweet Red Pepper Sauce (Prepared Foods), warmed

Directions

1. Lay slices of prosciutto on clean work surface. Center 1 sage leaf on each prosciutto slice. Top sage leaf with cod portion and wrap prosciutto around cod. Season with pepper. Dust cod "packet" with pan-searing flour; pat off excess. Set aside.

2. Heat olive oil in pan on MEDIUM-HIGH, until oil faintly smokes. Add cod packet, sage leaf-side down. Turn over when cod changes color one-quarter of way up and seared side has turned paper bag-brown, about 5 min.

3. Reduce heat to MEDIUM. Cook about 4 min, until internal temp reaches 120 degrees. (Check by inserting thermometer halfway into thickest part of cod.)

4. Add basting oil and butter to pan; swirl. Baste with spoon, 1-3 min, until internal temp of cod reaches 130 degrees. Transfer to clean platter. Let rest at least 2 min.

5. Serve with warmed sauce.
