 Salt1/2 Tablespoon
 Paprika1/2 Tablespoon
 Black pepper1 Tablespoon
 Pepper white1 Tablespoon
 Garlic powder1 Tablespoon
 Dried basil1 Tablespoon
 Dried thyme1 Tablespoon
 Oil2 Tablespoon
 Sausage1 1/2 pound, smoked
 Onions2 , chopped
 Green bell peppers1 1/2 To taste, chopped
 Celery stalks4 , chopped
 Garlic2 Clove (5gm), minced
 Bay leaves2
 2 cans black-eyed peas, drained and rinsed
 Chicken broth1 Can (10oz)
 Rice2 Cup (16 tbs)

Directions

Combine first 7 ingredients together in a small bowl to make a seasoning mix. In a large pan or pot, brown sausage slices in oil. Add onions, peppers, and celery and sauté until soft, adding garlic at the end so it doesn’t burn. Stir in seasoning mix. Add bay leaves, black-eyed peas, and chicken broth. Simmer for at least 30 minutes to ensure good marriage of flavors. While the mixture is cooking, make the rice to serve the Hoppin’ John over.
