Weezie's Hoppin' John Recipe
Comfort food simplified for everyday cooking! Surprisingly full of flavor and texture to make everyone ask for seconds. Serve as a main dish with greens and bread, or serve as a side dish with roast chicken. The pepper quantities are family-friendly, but add cayenne and Tabasco to spice it up!

Ingredients

| Paprika | 1/2 Tablespoon | |
| Black pepper | 1 Tablespoon | |
| Pepper white | 1 Tablespoon | |
| Garlic powder | 1 Tablespoon | |
| Dried basil | 1 Tablespoon | |
| Dried thyme | 1 Tablespoon | |
| Oil | 2 Tablespoon | |
| Sausage | 1 1/2 pound, smoked | |
| Onions | 2 , chopped | |
| Green bell peppers | 1 1/2 To taste, chopped | |
| Celery stalks | 4 , chopped | |
| Garlic | 2 Clove (5gm), minced | |
| Bay leaves | 2 | |
| 2 cans black-eyed peas, drained and rinsed | ||
| Chicken broth | 1 Can (10oz) | |
| Rice | 2 Cup (16 tbs) | |
Directions
Combine first 7 ingredients together in a small bowl to make a seasoning mix. In a large pan or pot, brown sausage slices in oil. Add onions, peppers, and celery and sauté until soft, adding garlic at the end so it doesn’t burn. Stir in seasoning mix. Add bay leaves, black-eyed peas, and chicken broth. Simmer for at least 30 minutes to ensure good marriage of flavors. While the mixture is cooking, make the rice to serve the Hoppin’ John over.
