Italian Wedding Soup Recipe Video
Wedding soup is the marriage betwixt greens and meat - so good, and so easy
Ingredients
1.3 lbs ground beef
1 egg
1/4 cup seasoned breadcrumbs
3 Tbs Parmesan cheese
1 tsp dried oregano
salt and pepper
8 cups low sodium chicken broth
1/8 tsp ground nutmeg
7 oz baby spinach
1/2 cup small pasta such as acini de pepe
1/8 tsp ground nutmeg
freshly grated Parmesan cheese
Directions
combine beef, egg, bread crumbs, Parmesan cheese, oregano and salt and pepper
shape into very small meatballs
saute meatballs in olive oil
bring chicken broth to a boil and add spinach and pasta
cook 10 mins
add drained meatballs, nutmeg and salt and pepper
serve with parmesan cheese
