Veal Cannelloni Recipe

Ingredients
1/4 cup finely chopped onion
1/4 cup finely chopped celery
2 tablespoons finely chopped carrot
1 tablespoon minced parsley
2 tablespoons olive oil
2 cups ground cooked veal
1/4 teaspoon salt
1/8 teaspoon white pepper
1/4 teaspoon oregano, crushed
1/4 teaspoon basil, crushed
1/2 cup strong chicken broth (1 chicken bouillon cube dissolved in 1/2 cup boiling water)
1/8 teaspoon nutmeg
2 cups Medium
White Sauce
Pasta for Cannelloni
1/4 cup tomato sauce
1/4 cup cream
1 cup grated
Parmesan cheese
Directions
Cook onion, celery, carrot, and parsley in hot oil in a skillet about 3 minutes.
Stir in veal, salt, pepper, oregano, basil, and chicken broth.
Cook about 15 minutes.
Stir 1/2 cup white sauce into veal mixture.
Prepare pasta.
Spoon veal filling equally on the pasta squares and roll up.
Arrange on an oven proof platter.
Blend tomato sauce and cream into remaining white sauce; pour over cannelloni.
Sprinkle top with cheese.
Set in a 425°F oven 10 minutes, or until top is browned.
