Ingredients
3 tbsp (45 ml) butter
5 tbsp (75 ml) onion, finely sliced
1 tbsp (15 ml) garlic,finely sliced
2 tbsp (30 ml) chopped parsley
2 tomatoes, diced
1 1/2 cups (375 ml) wax beans, cooked, sliced in half
8 oz (237 ml) canned cream of tomato soup
Salt and pepper
4 hard-boiled eggs, chopped
Directions
– In a skillet, melt butter and saute onion and garlic.
– Add parsley, tomatoes, and wax beans, stir, then add cream of tomato soup, season with salt and pepper, cover and cook over medium heat for 10 minutes.
– Place in serving dish, sprinkle with chopped eggs and serve.
