Watermelon Pudding Recipe
Ingredients
| Watermelon | 3 Cup (16 tbs), pureed | |
| Lemon juice | 1 Teaspoon | |
| 1 env. unflavored gelatin | ||
| 1 pkg. strawberry-flavored gelatin dessert | ||
| 3/4 lb. nonfat cottage cheese | ||
Directions
In a saucepan, combine the watermelon puree, lemon juice, and unflavored gelatin.
Let it stand for five minutes or so to soften.
Heat gendy until the gelatin dissolves.
Remove from the heat and stir in the strawberry-flavored gelatin.
Stir until the mixture is smooth and the gelatin is dissolved.
Pour half the mixture into six custard cups coated with non-stick cooking spray.
Chill until set.
Pour the remainder into a blender or food processor.
Add the cottage cheese and blend.
Pour the blended cheese on top of the first mixture.
Chill until firm.
