 Watermelon rind, peeled, cut into desired pieces
 2 1/2 cups sugar to each lb. rind
 Lemons, 2 to each 5 lbs. rind
 Alum
 Salt To Taste

Directions

Peel and remove all ripe red part from rind.
Cut into small squares or desired shapes.
Soak 12 hours in salted water, using 1 tablespoon salt to each quart of water.
Drain.
Cover with fresh water and boil for about 20 minutes, adding a pinch of alum.
