Watermelon Pickles Recipe

Ingredients
Watermelon rind
Limewater, made with 2 quarts cold water and 1 tablespoon lime (calcium oxide purchased in a drugstore)
2 tablespoons allspice
2 tablespoons whole cloves
10 two inch pieces stick cinnamon
1 quart vinegar
4 pounds sugar
Directions
1. Select thick rind from a firm, not overripe, melon. Trim off the green skin and pink flesh. Cut into one-inch cubes enough trimmed rind to measure three quarts.
2. Soak for one hour in the limewater. Drain, cover with fresh water and boil until fork tender, ten minutes or longer. Drain.
3. Tie the spices in a cheesecloth, add the vinegar, one quart fresh water and sugar and bring to a boil. Add the watermelon rind and boil gently, uncovered, until clear. Add more water if the syrup becomes too thick. Remove the spice bag.
4. Pack the rind in hot sterile jars and fill the jars to the top with syrup. Seal tightly.
