Ingredients

 
2 medium jicama peeled and cut into 3/4 inch cubes
 
1/4 cup fresh lime juice
 
1/2 teaspoon salt
 
1 piece watermelon
 
1/2 cup loosely packed fresh cilantro leaves, chopped
 
1/8 teaspoon ground red pepper
 
Lime slices for garnish

Directions

In large bowl, toss jicama with lime juice and salt; cover and refrigerate 30 minutes.
Meanwhile, cut rind from watermelon; discard rind.
Cut flesh into 1/2 inch cubes to equal 4 cups; discard seeds.
To jicama, add watermelon, cilantro, and ground red pepper; toss well.
Cover and refrigerate 15 minutes longer to allow flavors to blend.
Garnish with lime slices.

This is wonderful with mint, instead of cilantro. I like to julienne the jicama, and infuse the mint leaves in a simple syrup before tossing with the salad. Try adding Blueberries for the 4th of July- pretty red, white and blue!
