Watercress Soup Recipe

Ingredients
1 lb sliced potatoes
1 finely sliced onion
1 bunch watercress
1 3/4 cups milk
2tbsp butter
Salt
Pepper
Directions
Put the potatoes and onion in a large casserole with 21/4 cups (500 ml/18 fl oz) water.
Cover and microwave on HIGH for 12 minutes.
Remove the tough stalks from the watercress, rinse thoroughly, drain and puree until smooth in a food processor.
Stir the watercress puree into the casserole, cover and microwave for a further 3 minutes.
Heat the milk in a bowl for 3 minutes on HIGH.
Pour the vegetable mixture into a food processor and puree once more, then pour the soup into a tureen.
Stir in the butter and hot milk.
Season with salt and pepper.
Stir well
Cover and microwave on HIGH for 12 minutes.

Stir the watercress puree into the casserole, cover and microwave for a further 3 minutes.
Heat the milk in a bowl for 3 minutes on HIGH.
Pour the vegetable mixture into a food processor and puree once more, then pour the soup into a tureen.
Stir in the butter and hot milk.
Season with salt and pepper.
Stir well
