Watercress-Orange Salad Recipe

Ingredients

 
2 bunches watercress
 
3 heads Belgian endive
 
2 oranges
 
2 shallots, finely chopped
 
1/3c. olive oil
 
2 tbsp. lemon juice
 
Salt and pepper to taste

Directions

Wash, trim and cut watercress into small pieces; place in large bowl.
Cut endive in 1/4-inch pieces.
Peel and section oranges.
Add endive and orange sections to watercress.
Combine remaining ingredients in jar; blend well.
Pour over salad; toss gently.
