Watercress And Radish Salad Recipe

Ingredients

 
6 bunches watercress (6 cups washed and trimmed)
 
1 1/2 cups thinly sliced radishes
 
3 tbsp tarragon vinegar
 
1 1/2 tsp dried/fresh chopped tarragon
 
1/2 cup olive oil
 
1/16 tsp dry mustard
 
1/16 tsp paprika
 
3/4 tsp salt
 
Grinding of pepper
 
2 small Boston lettuce

Directions

Wash and trim watercress.
Dry by shaking gently in a towel.
Combine watercress and radishes and chill well.
Combine tarragon vinegar, tarragon, olive oil, mustard, paprika, salt and pepper in a small jar with a tight lid.
Shake to blend.
Line a bowl with lettuce at serving time.
Pour tarragon dressing over watercress and radishes and toss lightly.
Add to bowl and serve immediately.
