Ingredients
4 to 6 oz. fresh fish, boned, skinned
Marinade:
1/2 teaspoon rice wine or dry sherry
1/4 teaspoon salt
1 teaspoon cornstarch
1/2 teaspoon sesame oil
2/3 cup chicken broth
5 cups water
1-1/2 teaspoons salt
6 oz. watercress, cut in 1-inch lengths
1/4 teaspoon pepper
1 teaspoon sesame oil
Directions
Cut fish into paper-thin slices with a cleaver.
Combine marinade ingredients in a medium bowl.
Add fish; mix well.
Let stand 20 minutes.
Combine chicken broth, 5 cups water and salt in a medium saucepan.
Bring to a boil over medium heat.
Add fish slices and watercress.
Bring to a second boil.
Add pepper.
Remove from heat.
Stir in sesame oil.
