Oriental Watercress Soup Recipe

Ingredients

 
Raw Pork- 1/2 pound
 
Soy Sauce- 2 tablespoons
 
Cornstarch- 2 teaspoons
 
Sugar- 1/2 teaspoon
 
Pepper- 1/4 teaspoon
 
Oil- 2 tablespoons
 
Watercress- 3 bunches
 
Ginger Root- 2 teaspoons, sliced
 
Chicken Broth or Water- 6 cups
 
Ac'cent- 1/2 teaspoon
 
Salt- 2 teaspoons
 
Eggs- 2nos, beaten
 
Ginger- 1 tablespoon, cut into juliennes

Directions

GETTING READY
1) Trim all the fat off from the pork and dice.
2) In a bowl toss together, pork, soy sauce, cornstarch, sugar, pepper and 1 tablespoon of oil.
3) Cut the stems of the watercress, wash and drain.

MAKING
4) In a saucepan, heat the remaining oil and fry ginger slices for 1 minute.
5) Stir in the broth or water and bring to a boil.
6) Add in the watercress, Ac-€™cent, salt and pork mixture.
7) Cover and simmer for 20 minutes.
8) Stir the eggs into the soup until set.

SERVING
9) Serve hot garnished with juliennes of ginger.
