Watercress Soup Recipe

In my personal opinion, this Watercress Soup stands Numero Uno in the world and I cannot contain my urge to offer this to you. It is always prepared with Vegetable as the key ingredient. Ingredients

 
2 bunches watercress
 
4 tablespoons butter
 
3/4 cup all-purpose flour
 
8 ounces milk
 
5 cups water
 
1 teaspoon sugar
 
Salt and pepper, to taste
 
1/2 medium-sized onion, finely chopped

Directions

Trim and wash watercress very thoroughly and set aside.
Melt butter over low heat; add flour slowly and blend 3 to 5 minutes.
Scald milk and slowly stir into flour mixture.
Add water, watercress and remaining ingredients.
Cook slowly, 15 to 20 minutes.
