Warming Winter Soup Recipe

Ingredients

 
1/4 cup butter
 
1 large leek, finely sliced
 
2 large carrots, peeled and thinly sliced
 
1 cup peeled, cubed potato
 
1 small cauliflower, divided into florets
 
2 celery sticks, finely chopped
 
1 onion, finely chopped
 
2 fatty bacon slices, rind removed and chopped
 
1 teaspoon mixed herbs
 
4 1/4 cups well flavored beef or chicken bouillon
 
Freshly ground black pepper

Directions

1 Put the butter into a 2.25-2.75 litre/4-5 pint (10-12 cup) mixing bowl and microwave on full power for 1 1/2 minutes to melt.
2 Stir in the leek, carrots, potato, cauliflower florets, celery, onion and bacon. Mix well.
3 Cover with plastic wrap and pierce. Microwave on full power for 4 minutes.
4 Stir in the herbs, stock (bouillon) and pepper to taste.
5 Cover with plastic wrap and pierce. Microwave on full power for 17 minutes, stirring once, half way through cooking.
6 Allow to stand, covered, for 6 minutes before serving with grated cheese and French bread.
