Warm Spinach Salad with Crispy Onions and Boar Bacon Dressing Recipe
Ingredients

| Parsley | 1 Teaspoon, chopped (Boar-Bacon Dressing (yields 2 1/2 cups):) | |
| Olive oil | 1 Cup (16 tbs) (Boar-Bacon Dressing (yields 2 1/2 cups):) | |
| All-purpose flour | ||
| Onion | 1 , thinly sliced (Salad:) | |
| Vegetable oil | 1 Cup (16 tbs) (Salad:) | |
| Spinach | 2 Pound, steamed (Salad:) | |
| 1 pint baby pear or cherry tomatoes, halved | ||
| Salt | To Taste | |
| Pepper | To Taste | |

Directions
MAKING
1)For preparing the dressing, mix together vinegar, garlic, parsley and bacon.
2)Gradually add in the oil and stir to incorporate well. Season dressing with salt and pepper.
3)For making salad, add salt and pepper to flour.
4)Coat onion slices with the flour and then deep fry in oil until brown and crisp. Drain excess oil in kitchen towels.
5)Mix together spinach and the prepared dressing.
6)Transfer onto serving plates along wth tomatoes.
7)Spoon the fried onion over this.
SERVING
8)Serve warm with the prepared boar-bacon dressing.
