Ingredients

 2 (4-ounce) skinned, boned chicken breast halves
 Salt1/8 Teaspoon
 Cooking spray
 1 cup chopped Red Delicious apple
 Lemon juice1 Tablespoon
 Chicken broth1/2 Cup (16 tbs)
 Cornstarch1 Tablespoon
 1 1/2 tablespoons apple jelly
 Apple Juice1 Tablespoon
 Olive oil2 Teaspoon
 Cider vinegar1 Teaspoon
 Garlic1 Clove (5gm), minced
 Spinach leaves6 Cup (16 tbs)
 Radicchio1 Cup (16 tbs), chopped
 Parmesan cheese2 Tablespoon, grated

Directions

MAKING
1. Sprinkle about an eighth of a teaspoon of salt over the chicken and rub it well
2. Apply a coat of cooking spray over a skillet and heat it over a medium to high flame
3. Add the chicken and cook for about five minutes or less on each side; slice it into thin strips when well cooked
4. In a bowl, toss the lemon juice and apple together and drain the liquid out when well coated; set aside
5. In another bowl, combine the broth and cornstarch and whisk to blend well; add it to the skillet and alow to boil and then cook for a minute, stirring
6. Turn the heat down, add jelly and the next ive ingredients and stir it all well
7. Add spinach and radicchio and cook for a couple of minutes till the spinach begins to wilt a little

SERVING
8. Place the spinach mixture on the plates, add chicken and then apple mixtures on top and sprinkle cheese before serving
