Warm Spinach and Rice Chicken Salad Recipe
Ingredients
| UNCLE BEN'S Brand Chicken Rice Dishes - 1 box | ||
| Boneless, skinless chicken breasts - 2 (about 8 ounces) | ||
| Reduced-fat Italian salad dressing - 1/3 cup , divided | ||
| Spinach | 4 Cup (16 tbs), chopped | |
| Plum tomatoes | 2 | |
| Ripe olives | 1/4 Cup (16 tbs), pitted | |
Directions
MAKING
1 As per the package directions, prepare the rice.
2 Brush the chicken evenly with 2 teaspoons salad dressing.
3 Grill or broil for 20 to 25 minutes or the until chicken is no longer pink in center and juices run clear, turning once.
4 Diagonally slice the chicken.
5 In a bowl, combine hot cooked rice with remaining salad dressing, spinach, tomatoes and olives.
6 Stir well until the spinach is slightly wilted.
SERVING
7 Place the rice mixture on individual serving plates and serve topped with sliced chicken.
