Ingredients

 4 medium-size red new potatoes, unpeeled
 4 to 6 tender lettuce leaves (ruby or Boston)
 1 red or yellow pepper, finely diced
 VINAIGRETTE
 1/2 cup almond or safflower oil
 1/4 cup tarragon vinegar
 Pepper red1 Tablespoon, minced
 Yellow pepper1 Tablespoon, minced
 Salt To Taste
 Pepper To Taste

Directions

1. Steam the potatoes until tender, about 10 minutes. Slice each potato into 5 or 6 pieces, keeping each potato separate.
2. Combine all the ingredients for the vinaigrette in a mixing bowl.
3. Arrange lettuce on individual serving plates and put the potatoes and the diced pepper on top. Spoon the vinaigrette over the salad and serve.
