Warm Potato Salad Recipe
Ingredients
| 2 tablespoons olive or vegetable oil | ||
| 1 large red or green bell pepper, diced | ||
| Onion | 1 Medium, diced | |
| 2 pounds all-purpose potatoes, peeled, if desired, and cut into 1/2 inch pieces | ||
| 1 envelope Lipton Recipe Secrets Savory Herb with Garlic Soup Mix | ||
| Water | 1 Cup (16 tbs) | |
| Red wine vinegar | 2 Tablespoon | |
| 1 teaspoon Dijon-style mustard | ||
Directions
In 12-inch skillet, heat oil over medium heat and cook red pepper and onion, stirring frequently, 5 minutes.
Add potatoes and savory herb with garlic soup mix blended with water.
Bring to a boil over high heat.
Reduce heat to low and simmer covered, stirring occasionally, 15 minutes or until potatoes are tender.
Stir in vinegar and mustard.
