 Radicchio1
 Watercress1/2 Bunch (100gm)
 Peanut or Vegetable Oil - 1/4 cup
 Walnut oil1 Tablespoon
 White wine vinegar2 Tablespoon
 Tarragon1 Tablespoon, finely chopped
 Walnuts - 3/4 cup, coarsely chopped
 Skinless Boneless Chicken - 1 pound, cut into 1/2 inch strips
 Snow peas1/2 pound
 Chicken broth1/3 Cup (16 tbs)
 Mushrooms1/2 pound, finley sliced
 Shallot1
 Salt To Taste
 Pepper To Taste

Directions

MAKING
1) Onto 4 dinner plates, arrange the radicchio and watercress
2) Into a skillet, pour 2 tablespoons of oil
3) Into a measuring cup, whisk together the remaining oil, walnut oil, vinegar and tarragon and keep aside
4) Add the chopped walnuts and stir fry till light brown
5) Add the chicken strips and sauté
6) Season with salt and pepper
7) Add the chicken broth and snow peas
8) Stir the chicken till well cocked and the snow peas become tender
9) Into a pan on low flame combine the vinegar and mushrooms, with the shallot
10) Coat the vegetables, taking care not to boil the mixture
11) Onto the greens spoon the mixture with the pan juices
