Warm Chicken Walnut Salad with Snow Peas Recipe
Ingredients
| Radicchio | 1 | |
| Watercress | 1/2 Bunch (100gm) | |
| Peanut or Vegetable Oil - 1/4 cup | ||
| Walnut oil | 1 Tablespoon | |
| White wine vinegar | 2 Tablespoon | |
| Tarragon | 1 Tablespoon, finely chopped | |
| Walnuts - 3/4 cup, coarsely chopped | ||
| Skinless Boneless Chicken - 1 pound, cut into 1/2 inch strips | ||
| Snow peas | 1/2 pound | |
| Chicken broth | 1/3 Cup (16 tbs) | |
| Mushrooms | 1/2 pound, finley sliced | |
| Shallot | 1 | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
MAKING
1) Onto 4 dinner plates, arrange the radicchio and watercress
2) Into a skillet, pour 2 tablespoons of oil
3) Into a measuring cup, whisk together the remaining oil, walnut oil, vinegar and tarragon and keep aside
4) Add the chopped walnuts and stir fry till light brown
5) Add the chicken strips and sauté
6) Season with salt and pepper
7) Add the chicken broth and snow peas
8) Stir the chicken till well cocked and the snow peas become tender
9) Into a pan on low flame combine the vinegar and mushrooms, with the shallot
10) Coat the vegetables, taking care not to boil the mixture
11) Onto the greens spoon the mixture with the pan juices
