Warm Apple and Blueberry Compote with Granola and Yogurt Recipe
Ingredients
| Tart apples- 3, Granny Smiths or Winesaps | ||
| Blueberries | 1 Pint | |
| Unsalted butter | 1 Tablespoon | |
| Brown sugar | 2 Tablespoon | |
| Ground cinnamon- a good pinch | ||
| Freshly nutmeg- a good pinch, grated | ||
| Granola | 1 1/3 Cup (16 tbs) | |
| Low-fat plain yogurt- 1/2 cup | ||
Directions
GETTING READY
1. Start by peeling and coring the apples and cutting them into eighths, also rinse the blueberries, discard any that are bad and pulling off and discarding stems
MAKING
2. In a large nonstick skillet, melt the butter over medium heat, add apples and cook for 3 to 4 minutes, keep stirring occasionally, add brown sugar, cinnamon, and nutmeg and cook 1 minute
3. In the same skillet, add the blueberries, then stir, and continue to cook for 4 to 5 minutes, till the blueberries starts to release liquid
4. In 4 serving bowls, spoon the apples and blueberries
5. Spoon with about 1/3 cup of granola and 2 tablespoons of yogurt
