Directions

FOR SALMON
MAKING
1. In a bowl, place the salmon fillet and add olive oil and Italian seasoning. Marinate well. Cover the marinated salmon in a foil.
2. Grill the salmon on both sides until done.

SERVING

MAKING
4. In a bowl, place the iceberg lettuce. Pour balsamic vinaigrette and combine with lettuce.

SERVING

FOR ITALIAN PESTO
MAKING
6. In a blender, add lemon juice, olive oil, green chilies, garlic, Italian basil, salt, black pepper and walnuts.
7. Blend to a smooth paste. Transfer it to a dish and add parmesan cheese. Mix well.
8. Apply 1 ½ teaspoon of pesto on each sourdough bread slice.

SERVING
9. Serve the Grilled Salmon with Italian Pesto, Sourdough Bread and Lettuce Salad. Have some California merlot wine and enjoy the dinner!

As 95% of the walnuts available in the US are grown in California they are often called California walnuts, but in fact they are English walnuts or Juglans Regia. The English walnut is grafted on to hardy Black Walnut rootstock. There are over 30 varieties of walnuts grown in California; however, two varieties—Chandler and Hartley—account for nearly 60 percent of total production. http://www.walnuts.org/walnuts101/faq.php I have two different walnut trees growing in my yard both grafted. One produces enormous sized walnuts-they keep the squirrels happy as do the acorns on the oak trees. I do not spray so they often have worms inside plus take so much work to dry, peel, crack, and lift out the meat. The squirrels love them!
