Walnut Wonders Recipe
Ingredients
| 175 g -6 oz butter | ||
| 175 g - 6 oz sugar | ||
| Eggs | 2 | |
| Few drops vanilla essence | ||
| 375 g - 13 oz plain flour | ||
| Soda bicarbonate | 1/2 Teaspoon | |
| Baking powder | 1 Teaspoon | |
| 115 g - 4 oz chopped walnuts | ||
| 115 g - 4 oz chopped dates | ||
| Extra flour if needed to make a pliable dough | ||
| Crushed cornflakes | ||
Directions
With an electric mixer, cream together the butter and sugar.
Beat the eggs and vanilla essence until light and frothy.
Into the bowl sift the flour, bicarbonate of soda and baking powder.
Add all the other ingredients except the cornflakes.
Mix well together with your hands.
The dough should be firm but a little sticky.
Add as much extra flour as necessary.
If it is too dry you may need to add a little milk to make it slightly sticky.
Make small balls between your palms and flatten very slightly.
Roll this into the crushed cornflakes and place evenly and well spaced onto a baking tray.
Bake in a preheated oven or until lightly golden.
Allow to cool in the tray for a while then remove onto the cooling tray.
