 Caster sugar220 Gram
 Plain flour4 Tablespoon
 Coconut90 Gram, desiccated
 Walnuts60 Gram, chopped
 2 teaspoons grated lemon rind
 Eggs4 Small
 Milk375 Milliliter
 Butter125 Gram, melted
 Double cream250 Milliliter, Whipped

Directions

1. Place sugar, flour, coconut, walnuts and lemon rind in a food processor and process for 30 seconds. Add eggs, milk and butter and process for 1 minute longer.
2. Pour mixture into a greased and lined 23 cm (9 in) flan dish. Bake for 45 minutes or until cake is cooked when tested. Serve warm with whipped cream.
