Walnut Sables Recipe
Ingredients
| Plain flour | 4 Ounce | |
| Butter | 4 Ounce | |
| 4 oz mature Cheddar cheese, grated | ||
| Salt | 1 Pinch | |
| Pinch of dry mustard | ||
| Beaten egg | ||
| Few chopped walnuts | ||
Directions
Sift the flour into a bowl. Rub the butter into the flour with the fingertips until the mixture resembles fine crumbs. Add the cheese, salt and mustard and work together to form a dough.
Roll out the dough to about 6 mm (i inch) thick on a lightly floured board. Neaten the edges and cut into 5 cm (2 inch) squares. Cut each in half diagonally. Brush the sables with beaten egg. Sprinkle with nuts and press them lightly into the dough. Place on a baking sheet and bake in a preheated moderately hot oven (200°C/400°F, Gas Mark 6) for about 10 minutes. Cool on a wire rack. Makes 30
