Walnut Penuche Recipe
Ingredients
| Walnuts | 1/2 Cup (16 tbs), coarsely chopped | |
| Butter/Margarine | 2/3 Cup (16 tbs) | |
| 1 cup packed light brown sugar | ||
| Sweetened condensed milk | 1 Can (10oz) | |
| Vanilla | 1/2 Teaspoon | |
Directions
To toast walnuts, spread in a single layer in a 9-inch glass pie plate or a microwave pie plate.
Stirring every 2 minutes, microwave on HIGH for 6 minutes.
Place butter in a 2-quart glass measure.
Microwave on HIGH for 1 minute.
Blend in light brown sugar and condensed milk.
Stirring every 2 minutes, microwave on HIGH for 8-9 minutes, or until mixture is a medium-caramel color.
Stir in vanilla and beat with a wooden spoon, 2-3 minutes.
Fold in walnuts.
Pour into a buttered 8-inch square dish.
Cool to lukewarm; then refrigerate until set.
Cut into squares.
