Directions

Put sugar, water, and 2 tablespoons of the corn syrup in small, deep heavy saucepan.
Bring to boil, stirring until sugar is dissolved.
Continue cooking to 290°F. on a candy thermometer.
Beat egg whites with salt until stiff.
Gradually add syrup, beating constantly with electric beater.
Continue beating while cooking honey and remaining corn syrup to a temperature of 290 °F.
Gradually add honey mixture to egg-white mixture, beating constantly.
Add nuts and put mixture in top part of double boiler.
Cook over simmering water, stirring frequently, for about 15 minutes, or until candy begins to dry out.
Add vanilla and press into buttered pan (8x8x2 inches).
Let stand until firm.
Then cut into 1 1/2 x 3/4-inch pieces.
