1. Finely chop walnuts. Pour 1 cup of the nuts into a 9-inch square pan, and pat in an even layer.
2. Soften gelatin in .1/2 cup of the water. Combine remaining 3/4 cup water with the sugar and salt, and cook until syrup reaches 234°F (soft ball stage). Add softened gelatin and let mixture stand until it cools to 130°F.
3. Add mint extract and food coloring. Beat at high speed with an electric mixer until very thick. Turn into the walnut-layered pan. Sprinkle remaining chopped walnuts on top. Let stand several hours or overnight.
4. Cut into squares and roll sides in any walnuts remaining in pan.
