Walnut Cookies Recipe
Ingredients
| 1/2 cup walnut pieces | ||
| All purpose flour | 1 1/2 Teaspoon | |
| Egg whites | 2 Large | |
| Salt | 1/8 Teaspoon | |
| Cream of tartar | 1/8 Teaspoon | |
| Vanilla extract | 1/2 Teaspoon | |
| 1/4 cup packed light brown sugar | ||
Directions
Heat the oven to 275 degrees.
Lightly butter 2 baking sheets.
Finely chop 1/4 cup of the walnuts.
Put the remaining nuts in a food processor or blender.
Add the flour and process until the nuts are ground.
Do not overgrind.
Put the egg whites in a bowl.
Add the salt and cream of tartar and beat until soft peaks form.
Add the vanilla and then the sugar, 1 tablespoon at a time, and continue beating until stiff peaks form.
Fold in the ground and chopped walnuts.
Drop the mixture onto the baking sheets in teaspoon-fuls and bake for 1 hour.
Turn off the oven but do not open the door.
Leave the cookies in the oven for 1 hour longer.
They will be crisp on the outside and chewy inside.
