Ingredients

 
2-3 eating apples (such as red delicious or Jona gold) cut into 1/2 inch chunks
 
2 stalks celery diced
 
2 Tbs walnuts coarsely chopped
 
2 Tbs currents, plumped in hot water for 10 mins and then drained
 
1 Tbs lemon juice
 
2 Tbs low fat plain yogurt
 
2 Tbs mayonnaise
 
green leaf lettuce, optional

Directions

Combine apples with lemon juice and toss to coat. Add celery, walnuts and currents. Add yogurt and mayo and gently blend to
coat salad with dressing. Serve on a bed of lettuce, if desired
