Waldorf Rice Recipe

Ingredients

 
1/2 cup chopped onion
 
2 tablespoons butter or margarine
 
2 cups apple juice
 
1/3 cup water
 
1/2 teaspoon salt
 
1 cup uncooked regular rice
 
2 medium apples, chopped
 
1 cup sliced celery
 
1/2 cup coarsely chopped walnuts
 
1/2 teaspoon rum extract

Directions

Saute onion in butter in a Dutch oven until tender.
Add apple juice, water, and salt; bring to a boil.
Stir in rice; cover, reduce heat, and simmer 20 minutes.
Add remaining ingredients; remove from heat, and let stand 5 minutes
