Waldorf Salad Recipe
Waldorf salad is a fruited vegetable salad. Prepared with green grapes and apples with vegetables, the waldorf salad is crispy fresh and juicy. Dressed with apple juice and yogurt, it has walnuts for an added crunch.
Ingredients
3 medium size tart apples, peeled, cored, and cut into 1/2 inch cubes
1 tablespoon lemon juice
1 cup seedless red or green grapes
2 medium size stalks celery, chopped
2 medium size green onions, chopped fine
2 tablespoons reduced calorie mayonnaise
2 tablespoons plain low fat yogurt
3 tablespoons apple juice
1/4 teaspoon celery seeds
1 large bunch watercress, stems removed
2 tablespoons chopped walnuts
Directions
In a large bowl, toss the apples with the lemon juice.
Add the grapes, celery, and green onions, and toss again.
In a small bowl, combine the mayonnaise, yogurt, apple juice, and celery seeds, and mix well.
Spoon over the apple mixture and toss gently.
Wash the watercress, pat it dry on paper towels, and arrange it on individual salad plates.
Mound the apple mixture on top, and sprinkle with the walnuts.
Add the grapes, celery, and green onions, and toss again.
