Waldorf Salad Recipe

This waldorf salad is a lovely fruit and celery salad with added crunch of walnuts to it. tossed with cottage cheese and pineapple juice mix or dressing, this lovely fruit and celery waldorf salad is best served chilled.

Ingredients

 
2 tsp. lemon juice
 
2 cup apples, unpeeled, diced
 
1 cup celery, diced
 
1/2 cup seedless grapes, halved
 
1/2 cup pineapple tidbits, juice-packed, liquid drained and reserved
 
1/2 cup low-fat cottage cheese
 
2 tsp. nonfat dry milk
 
1 tsp. walnuts, chopped, optional

Directions

1. Sprinkle lemon juice on diced apples to keep them white. Toss apples, celery, grapes, and pineapple together gently.
2. Place cottage cheese, nonfat dry milk, and 1 tablespoon drained liquid from pineapple tidbits in blender. Blend until creamy smooth.
3. Pour over apple mixture and toss until thoroughly mixed. Chill.
