 Pastry shell9 inch, baked
 Flour1 Tablespoon
 Pineapple1 Can (10oz), crushed
 Corn starch3 Tablespoon
 Sugar2 Tablespoon
 1 tablespoon grated lemon rind
 Lemon juice1 Tablespoon
 Salt1/4 Teaspoon
 Butter1 Tablespoon

Directions

Dust baked pie shell with flour.
Set aside.
Combine pineapple and juice in 1 1/2 quart bowl.
MICRO WAVE 4 MINUTES on HIGH, or until mixture is hot.
Add corn starch, sugar, rind, lemon juice and salt.
MICROWAVE 3 MINUTES on HIGH, or until mixture thickens, stirring every minute.
Stir in butter.
Let stand 15 minutes.
Pour into baked pie shell.
