15 g (1/2 oz) (1 tablespoon) lard (shortening)

1 Stir the yeast into the lukewarm milk.
2 Sift the flour and salt and add a third of it to the milk and yeast.
Leave to stand and ferment for 40 minutes.
3 Blend the remainder of the flour with the melted butter, sugar and cinnamon.
Add the beaten eggs and the fermented yeast mixture, to form a soft, stiff dough.
4 Divide the dough into 50 g (2 oz) balls and leave for 40 minutes on a floured tray.
5 Meanwhile grease the waffle iron with the lard (shortening).
Heat the iron and place a flat- tened ball inside.
Spread it out to cover the iron and cook for 4 minutes over a moderate heat until the waffle is golden and cooked.
6 Dust the waffles with the icing (confectioner's) sugar and serve hot with maple or corn syrup, honey or jam.
Alternatively, the waffles can be served cold with whipped cream.
Tips: You can vary the flavour of waffles by adding either pureed fruit, raisins, coconut, lemon rind, chopped nuts to the mixture.
Alternatively, if you prefer savoury waffles, try adding grated cheese or chopped ham but do not forget to omit the sugar.
For teatime waffles, add some cocoa powder or melted choco- late and serve with ice-cream.
