Directions
Make a well in the center and pour in the egg yolks.
Add the milk and butter and mix quickly and lightly—it does not matter if the batter is lumpy and not smooth.
Beat the egg whites until stiff and fold into the batter.
Have the waffle iron heated, pour in enough batter to cover the base of the iron, close the lid and cook until no more steam escapes from the iron—about 2 to 4 minutes.
Serve at once, very hot.
