Wacky Chocolate Cake Recipe Video
Wacky Cake is an easy chocolate cake made right in the pan. Moist and delicious, serve with a little soy whipped cream or dairy-free ice cream.
Ingredients
2 1/4 cups whole wheat pastry flour|n4 Tbs cocoa powder|n1 tsp salt|n1 1/2 tsp baking soda|n1 cup sweetener (raw sugar, agave nectar, or maple, rice or barley syrup)|n1 1/2 tsp vanilla|n1 1/2 Tbs vinegar (apple cider, balsamic)|n4 Tbs oil|n5 Tbs unsweetened applesauce|n1 1/2 cups water
Directions
Preheat the oven to 350 degrees.|nIn a 9 x 13 baking dish, mix all of the dry ingredients with a fork. Add the wet ingredients and continue mixing thoroughly. Place the dish in the oven and bake for 25-30 minutes until the top bounces back slightly when touched or when a toothpick comes out clean.|nBest eaten within 1-2 days of baking, top with dairy-free ice cream, soy whipped cream or frosting.
