Virtually Allergy-Free Banana Bread Recipe

Ingredients

 
3 very ripe bananas juice of 1 lemon
 
1/2 cup (120 ml) soy margarine
 
1/2 cup (120 ml) honey PA cups (415 ml) Flour
 
1/4 cup (60 ml) rice bran
 
1/2 tsp (3 ml) salt
 
1/2 tsp (3 ml) cardamom
 
1 tsp (5 ml) cinnamon
 
1/2 tsp (3 ml) baking powder
 
1/2 tsp (3 ml) baking soda
 
1/2-l cup (120-240 ml) walnuts, chopped

Directions

Preheat oven to 375°F (190°C).
Mash bananas.
Add lemon juice and mix until smooth.
In another bowl, cream margarine and honey until creamy.
Add banana mix to butter mix, cream well.
In a separate bowl mix all dry ingredients together.
Add to banana mix, stir just until moistened.
Fold in nuts.
Scrape into a greased loaf pan.
Bake for approximately 30-45 minutes.
Let cool slightly before removing from pan to a rack.
