Virginia Roast Pork Recipe
I have to admit this recipe of Virginia Roast Pork is on my favorite list. It is an ideal Side Dish. My friends tried this Virginia Roast Pork the other day and they simply adored it. Do I need to say more?
Ingredients
1 3 to 4-lb. pork loin roast
Cloves Flour
2 tsp. salt
1/2 tsp. Pepper
2 c. cider
3/4 c. chicken broth
Directions
Score fat on pork; stud with cloves.
Mix 1 teaspoon salt and 1/4 teaspoon pepper; sprinkle over roast.
Bake, uncovered, at 350 degrees, allowing 35 min- utes per pound.
Baste with cider, adding small amount at a time.
Drain off fat.
Stir 2 tablespoons flour into pan drippings, blending well.
Add broth, stirring constantly, until thickened.
Stir in remaining salt and pepper.
